8 beef schnitzels
pepper to season
1 cup fresh breadcrumbs
1/2 cup chopped toasted cashew nuts
1/2 cup finely chopped dried apricots
1 Tbs minced ginger
2-3 chopped spring onions
1 egg
415g can Watties Madras Curry Sauce
Cut schnitzels in half & season with pepper. In a bowl mix together breadcrumbs, cashew nuts, apricots, ginger, spring onions & egg. Roll up tightly & place in ovenproof dish. Pour over Curry Sauce & cover with foil. Cook 180 degC 50-60 minutes.
