500g lean pork
1 onion, chopped
1 clove garlic, crushed
1 green pepper, diced
1 red pepper, diced
1 tsp grated fresh ginger
1 tsp each cumin, coriander & curry powder
350g Apple Sauce
3/4 cup chicken stock
2 Tbs raisins
salt & pepper
Cut pork into 2cm cubes. Heat 1 Tbs oil in pan & fry pork. Drain & remove. Add another 1 Tbs oil & fry onion, garlic & ginger until soft but not brown. Add peppers. Stir in cumin, coriander & curry powder. Cook 1 minute stirring all the time. Add apple sauce, chicken stock, raisins & pork. Cover, simmer 30 minutes stirring occasionally. Season with salt & pepper & serve with rice.
