1/4 cup olive oil
2 onions, peeled & finely diced
2 cloves garlic, crushed
800g canned tomatoes or 800g fresh tomatoes, peeled & roughly chopped
1 cup red wine vinegar
3 Tbs worcester sauce
1/4 cup brown sugar, tightly packed
2 tsp paprika
1 tsp celery seeds
salt & pepper to taste
Heat large saucepan. Add oil & onion & sweat without browning for 10 minutes over low heat. Add remaining ingredients & bring to boil. Simmer 30 minutes, stirring occasionally until thick & pulpy. Puree mixture in blender until smooth. Pour into serilised jars through a funnel. Seal.
Additional ingredients:
Mix in 2 finely chopped red peppers with tomatoes
Add 1 or several red chillies
Add 1/4 cup extra brown sugar for a sweeter taste.
Add capers, sundried tomatoes & chopped balck olives.
