300ml bottle spicy Apricot Sauce
150g softened butter
2 cups fresh white breadcrumbs
1/4 cup chopped fresh herbs (parsley, thyme, mint, basil, chives)
1/2 cup chopped walnuts
salt & pepper to season
8 rashers streaky bacon
Beat together apricot sauce & butter. Mix half apricot butter with breadcrumbs, herbs & nuts. Use this stuffing to stuff turkey. Spread remaining apricot butter between the skin & breast meat & over the turkey. Tie legs together & season. Arange bacon over breast & drumsticks. Roast turkey.
