4 ripe tomatoes, cut into 1cm dice
1/2 thumb ginger, peeled & finely julienned
200g fresh pineapple, skin removed & finely diced
40ml olive oil
30ml soy sauce
4 x 200g pieces salmon fillet
Mix everything, except salmon, in bowl.
Place salmon in dish & pour salsa over.
Marinate 1 hour.
Preheat oven to 220 degC, place dish in oven & cook 15 minutes. Serve.
