Marinade

4 Tbsp sweet chilli sauce
2 Tbsp olive oil
4cm fresh ginger, peeled & grated
2 cloves garlic, crushed
1 C corriander, finely chopped
Salt & Pepper
Satay Sauce
===========
3 cloves garlic, roughly chopped
4cm piece fresh ginger, peeled and roughly chopped
1 dried chilli
Juice and rind 1 lime
4 Tbsp crunchy peanut butter
1 Tbsp fish sauce
2 Tbsp soy sauce (or use kecap manis and leave out honey)
1 tsp seasme oil
1 tsp honey
½-1 C boiling water
For marinade, mix together and coat meat.
For sauce, blitz all ingredients except peanut butter in whizz. Mix in peanut butter and reduce on the stove until thick.
