Recipe Manager

2 cups plain flour
pinch of salt
2½ tsp baking powder
2 Tbsp caster sugar
4 large eggs
1½ cups milk
1 tsp vanilla extract
finely grated zest of 1 lemon
75g melted butter


Mix dry ingredients in a bowl. Separate eggs, putting whites in a grease-free bowl and yolks in a jug.

Whisk egg yolks with milk, vanilla extract and lemon zest. Beat egg whites with an electric beater until stiff peaks form. Pour milk and yolks into dry ingredients, adding melted butter, and stir until combined. Mix in a large Tbsp of the egg whites, then fold the rest in with a large spoon.

Heat waffle iron, add about 1 cup of mixture, spreading to the sides, put on the lid and cook for about 4 minutes. The waffle is ready when it is golden and no longer sticks to the waffle iron. Place waffles on a baking sheet in a low oven to keep them warm.
