The chicken is marinated in a delicious honey-soy marinade and served with homemade satay sauce.

Ingredients
280 g skinless chicken breast, chopped 2 clove(s) fresh garlic, crushed
1 tbs fresh ginger, finely grated
2 tbs soy sauce
2 tsp honey
1/4 tsp dried turmeric
1 medium fresh lime, (1 tbs juice, 2 tsp rind) 1 tbs light peanut butter
1/3 cup(s) reduced-fat coconut milk, steamed Asian greens, to serve

Instructions
Combine the chicken, garlic, ginger, soy sauce and honey in a glass bowl.
Preheat chargrill pan over high heat. Thread chicken onto 4 skewers. Cook for 3 minutes each side or until brown and cooked through.
Meanwhile, combine the turmeric, lime rind and juice, peanut butter and coconut milk in a small saucepan and bring to a simmer over medium heat. Simmer, stirring, for 3 minutes or until fragrant. Taste and season with salt.
Spoon Asian greens among serving plates, top with chicken and serve with satay sauce.
