1 C vanilla icecream
2tsp cornflour
2tsp water
300ml cream (or thickened cream)
2 Tbsp icing sugar
2 Tbsp brandy
Melt icecream gently in a pan. Stir in blended cornflour and water and mix until boils and thickens. Whip cream with icing sugar and brandy. Remove cornflour and icecream mixture from heat and fold in cream mixture.
