Eight skinless chicken breasts - chopped
1 C flour
Oil for frying
1 Tbsp curry powder
2 Tbsp brown sugar.
3-4 C cooked tomatoes, undrained (or two cans)
2 lge onions
4 cloves garlic
1 tsp salt
1 tsp thyme

Shake chicken inflour. Heat in frying pan and fry chcken until brown. Transfer to a large roasting dish, big enough to hold all chicken in 1 layer. Chop onions and garlic and cook until transparent. Add curry powder and stir 2-3 mins. Add sugar, saltm thyme & tomatoes. Simmer for 5 mins.

Pour over chicken and cover with a lid or foil. Cook in a moderate over 45mins - 1 hour. Sprinkle with chopped parsley or spring onions. Serve immediately.

Great with garlic bread.
