1 Tbs corn oil
1 large onion, finely chopped
50g lean bacon, finely chopped
4 celery sticks, chopped
1-2 litres beef stock
175 g any diced vegetables
salt
fresh ground black pepper
225g tomatoes, peeled & chopped
1 clove garlic, finely chopped
2 Tbs tomato puree or paste
1 tsp fresh basil or thyme
Heat oil in large pan. Add onion & fry gently covered until soft but not coloured. Add bacon, fry further 5 mins. Add celery, stock, salt, papper, tomatoes, tomato paste, garlic, diced vegetables & basil or thyme. Bring to boil. Cover & simmer gently 45 mins. Serve very hot.
