Note this is a half mix, double everything except Brandy and Juice/Rind of lemons and oranges

Fruit Mixture (Labour Weekend)

Rind and Juice of 1 orange and 1 lemon
¾ lb Sultanas
½ lb Currants
¼ lb seeded raisins (Lexia or Sunbeam)
1/8 lb Backed Cherries
1oz mixed peel
1½ oz almonds
1 Tbsp Marmalade
½ Tbsp Blackcurrant Jam
Small bottle of Ginger Ale
½ C Brandy

Measure fruit out. Mix in with orange and lemon juice.
Add lemon and orange rind and brandy. Mix.
Add small bottle ginger ale. Mix
Add Blackcurrant jam and Nuts and mix.

Leave for approx 2 weeks in large pot.

Cake Mix (Show Weekend, ~6 weeks prior to Christmas)

Fruit mixture as above
½lb butter
¼lb Muscovado Sugar
¼lb Brown sugar
4 eggs
10oz Flour
Pinch Salt.

Cream butter and sugar. Put in a large, clean plastic bucket. In four lots (eight if doing full recipe), mix in one egg. Then sprinkle ¼ of the flour followed by ¼ of the fruit mix. Mix until all ingredients wet. Repeat until all mixture added.

Line a cake tin with brown paper, which reaches above the side of the cake tin by half as much again.
Double line tin with baking paper.

Add mixture to tin. Decorate with almonds/glace fruit as needed.

Bake in a slow oven (150ºC) for 3 - 6 hours.
