1 kg tomatoes
1 Tbs oil
1 large onion
1 carrot
3 cups water
1 Tbs tomato paste
1 chicken stock cube
1 Tbs chopped chives
salt & pepper
Heat oil, add finely chopped onion & carrot & cook until onion is just tender. Add peeled & chopped tomatoes, cover & simmer 10 mins. Add water, stock cube, bring to boil, simmer 5 mins. Remove from heat & blend. Season with salt & pepper, stir in tomato paste.
