½ C walm milk
½C walm water
½ C brown sugar
4 tsp Active Dried Yeast
75 g butter, barely melted
1 large egg
1 tsp salt
4 C High Grade Flour
1 Tbsp Mixed Spice
1 Tbsp Cinnamon
1 tsp Ground Cloves
1 tsp Vanilla
1 C mixed fruit / currants
Breadmachine
Measure all into 750g capacity machine. Set to dough cycle and start. When cycle is complete, shape and bake.
Shape and Bake
Divide evenly into 4 pieces, then each of those pieces into 4 or 5. Shape each piece into round ball. Arrange in sprayed or teflon lined pan/roasting pan. Around 1cm between each. Cover with cling film and put in warm place until double in size. Rub 60g of cold butter into 1 C high grade flour. 3 Tbsp cold water to form a stiff dough. Roll thinly, then cut into strips. Brush with beaten egg and place on raised buns. Bake 225ºC 10-12 mins, or until lightly browned. Glaze immediatley with a syrup made by bringing to the boil 1tbsp golden syryp, honey and water.
