125 unsalted cashews
1 Tbs buter
1 cup (approx) chicken or turkey stock, brought to a simmer
salt & pepper
1-2 Tbs cream or creme fraiche (optional)
Process cashews until finely chopped. Melt butter gently in a pan. Add cashews & cook gently, stirring often, until softened. Gradually add hot stock, stirring constantly, until you have a sauce-like consistency. Check seasoning.
Either keep sauce simmering gently over a low heat of heat it up at the last moment. Stir in cream or creme fraiche just before serving.
Serve with roast turkey
