400g green beans
chives for tying bundles
1 Tbs lemon juice
Herb Butter:
50g butter, softened to room temperature
2 tsp each thyme leaves, chopped parsley & chopped basil
1 tsp finely grated lemon zest
1 small clove garlic, crushed
salt & freshly ground black pepper

Trim stalk end off beans. Cook beans in boiling salted water til just tender then drain well.
Divideinto 8 bundles & secure by tying chives around the middle of each one.
Melt herb butter in a frying pan and add lemon juice. Place beans in pan and heat through gently. Transfer to a place, drizzle with pan juices & serve immediately.

Herb Butter:
Mix butter until creamy then blend in remaining ingredients, seasoning to taste.
