1kg new potatoes
3 spring onions, finely diced
2 Tbs capers
5 small gherkins, finely chopped
½ cup chopped parsley
6 slices prosciutto, fried until crisp, broken into pieces
Cook potatoes in boiling salted water until just tender. Drain and refresh under cold water.
Using your hands, gently combine potatoes, spring onions, capers, gherkins and parsley in a bowl.
Add dressing to bowl and turn potatoes gently to coat. Serve topped with crispy prosciutto.
Dressing:
½ cup best-quality mayonnaise
½ cup sour cream
2 Tbs lemon juice
2 tsp wholegrain mustard
salt & freshly ground black pepper to taste
Whisk all ingredients together until smooth.
Serves 6-8
