1 cup flour
1 tsp baking powder
2 bunches coriander, chopped
½ red onion, diced
2 cloves garlic, peeled & chopped
splash of canola oil
2 egg yolks
½ cup milk
350g frozen corn or fresh corn kernels
1 tsp fish sauce
2 pinches black pepper
2 egg whites, lightly beaten
Mix flour, baking powder & coriander together and set aside. Fry onion and garlic in canola oil, then place in a bowl with egg yolks, milk, corn, fish sauce and pepper. Stir well.
Add dry ingredients, then fold in the egg whites. Shallow-fry small spoonfuls in oil until golden. Drain on paper towels.
Guacamole
2 avocadoes, smashed
juice of 3 limes
1 clove of garlic, peeled and smashed
1 red chilli, finely chpped
1 bunch coiander. chopped
salt and pepper
Mix together and adjust seasoning to taste. Top the corn cakes with guacamole and smoked chicken.
