1½ Tbs rum (or ½ tsp rum essence & 1 Tbs water)
1 cup raisins
125g butter
125g sugar
1 Tbs treacle
1 Tbs milk
1½ cups flour
1 tsp baking soda
Preheat oven to 170ºC. Sprinkle rum over raisins and set aside.
Place butter, sugar, treacle and milk in medium saucepan and bring to boil, stirring to dissolve sugar. Take off heat and add rum & raisins. Sift over flour and baking soda and mix well.
Drop spoonfuls of mixture onto lined baking trays and bake until golden, 10-12 minutes.
Makes about 30.
