100g flour
100g butter, grated
1 cup grated cheese
32g packet onion soup mx (optional)
1 egg yolk
Put the flour, butter, cheese & soup mix in a bowl. Rub ingredients together until they form a stiff biscuit mixture. Work in the egg yolk. Alternatively, process in a food processor and add the egg yolk when the mixture begins to form a stiff mix.
Turn mixture out on a lightly floured board, knead lightly. Use flour sparingly to dust the board & rolling pin. Roll mixture out to about 3mm thick, cut into shapes and place on a baking paper-lined tray. Brush with egg glaze if wished.
Bake 180ÂșC for 12-15 mins until crisp.
