4 large capsicums
1 large clove garlic, chopped
1 Tbs Italian parsley, chpped
1 Tbs balsamic vinegar
1/3 cup olive oil
extra oil
sea salt & pepper, to taste
Preheat oven to 200ÂșC. Cut capsicums in half and take out all the seeds. Lay on an oven tray and lightly drizzle oil over them, season well and bake 30-40 mins until skins are blackened. Take out of oven and cool. De-skin the capsicums and add to a food processor with the rest of the ingredients. Blend well and serve with bread for dipping. Makes about one cup.
