150g dark chocolate
2 eggs, separated
½ cup castor sugar
1¼ cups coconut
1 cup mixed fruit
½ cup cherries, chopped
¼ cup chopped walnuts
Preheat oven to 180ºC. Melt chocolate in bowl over hot water. Spread evenly in a swiss roll tin. Beat egg whites until stiff. Add yolks and sugar and beat well. Fold in coconut, mixed fruit, cherries and chopped walnuts. Spread over chocolate and bake 20-25 mins until golden brown. Cut when cold.
