½ onion, diced
1 clove garlic, crushed
8 sun-dried tomatoes, diced
3-4 Tbs oil from sun-dried tomato jar
Fresh thyme leaves
Zest from ½ lemon
1 cup soft breadcrumbs
Salt & freshly ground pepper
8 chicken drumsticks
8 slices prosciutto (or parma ham)
Preheat oven to 180ºC. Saute onion, garlic & tomatoes in oil untilonion is soft. Mix in thyme,zest, breadcrumbs and seasoning.
Use your thumb to make a pocket in each drumstick between skin and flesh. Press stuffing mixture into pockets and wrap each drum with a slice of prosciutto. Place in baking dish and roast until golden and cooked through, 25-30 mins.
