500g beef fillet
1 clove garlic, crushed
1 tsp minced ginger
1 tsp chopped lemon grass
3 tbs soy sauce
2 Tbs sesame oil
1 Tbs grated palm sugar or brown sugar
10 kaffir lime leaves
About ½ cup sesame seeds
Oil for frying (notolive)
Cut beef into about 2cm dice and place in a shallow dish.
Combine garlic, ginger, lemon grass, soy sauce, sesame oil and palm sugar. Mix through beef and marinate in fridge overnight.
Drain excess marinade from beef and thread meat on to pre-soaked wooden skewers, starting with a lime leaf. Sprinkle with sesame seeds.
Quickly fry skewers in a little oil for 1-2 mins each side until beef is medium rare or until cooked to your liking.
