1 medium or 1½ small granny smith apples
200g (1 cup) sultanas
200g (1 cup) mixed fruit
rind and juice of ½ lemon
rind of ½ orange
½ cup brown sugar
½ tsp mixed spice
½ tsp salt
¼ tsp ground cloves
¼ tsp grated nutmeg
2-3 Tbs brandy, whisky or rum

Cut the apple into about 12 slices discarding the core. Chop with the metal cutting blade into pieces about the size of currants. Add the cleaned sultanas, mixed fruit and the thinly peeled orange and lemon rinds. Process this mixture until fruit is chopped fairly finely.
Add the lemon juice and all the remaining ingredients and process briefly until everything is combined.
Spon the mixture into sterilised jars, pour a little extra brandy, whisky or rum over the surface, cover tightly and store in a cool place until you are ready to use it.
