Wash and paper towel dry fish fillets.
Season with salt and pepper.
Make a paste of:
¾-1 tube/bottle coriander paste
1 heaped teaspoon crushed garlic
2 teaspoons fish sauce
Coat fish with paste then wrap each fillet in tin foil sealing well.
Bake 180ºC 25 mins.
