Olive oil
1 large onion diced
2 cloves of garlic crushed
750g mince
6 sun-dried tomatoes, chopped
oyster sauce
soya sauce
worcestershire sauce
1 tin of chopped tomatoes
6 large potatoes cooked & mashed
salt & pepper
Preheat oven to 200 degC on fanbake.
Heat 2 Tbs of olive oil in pan brown the meat in two batches. Remove meat & add the onions & garlic to pan & saute until golden adding extra olive oil if needed. Add sun-dried tomatoes & cook further minute or so. Add chopped tomatoes, a slosh of oyster, soy & worcestershire sauce. Add a good grind of fresh black pepper. Add some tomato paste for more flavour. Place lid on pan & turn down heat to a simmer & cook 15-20 minutes. Taste & adjust seasonings if required. Transfer to deep pie dish, cover with mashed potatoes. Grate some cheese on top & bake in hot oven 10-15 minutes until golden.
