2-3 cloves garlic, peeled
2 lemons
3 Tbs manuka honey
2 Tbs olive or avocado oil
1 Tbs dark soy sauce
1 Tbs chopped thyme
4 large or 6-8 smaller (about 1Kg in total) skinless, boneless chicken breasts
salt & pepper to taste
Place garlic in a food processor & chop finely. Grate the zest from one of the lemons into the processor then squeeze in the juice from both. Add the honey, oil, soy sauce & thyme, then process again until well mixed.
Place the chicken in a sturdy, unpunctured plastic bag. Pour in marinade, squeeze out as much air as possible & seal the bag. Massage the sealted bag so the chicken is evenly coated with the marinade & leave to stand 20 minutes or longer (overnight if desired).
To cook, preheat grill or barbeque (brush barbeque lightly with oil). Remove chicken from marinade, season with salt & pepper, then place 5-10cm from heat & cook for about 8 minutes per side, brushing once or twice with the remaining marinade.
Serve with salad & some good bread.
