4 eggs, beaten
350 ml milk
6 cloves garlic, finely chopped
1 tsp salt
4 rashers rindless bacon, finely diced
3 Tbs chopped chives
1 Tbs olive oil
2 kg washed white potatoes, peeled and sliced very thinly
1 cup grated tasty cheese
Preheat oven to 190 degC
Mix eggs, milk, garlic, salt, bacon & chives. Reserve
Using oil, oil a 20cm square oven proof dish
Layer one third of potatoes evenly into dish & pour over one third of egg mixture, making sure bacon & chives are evenly distributed.
Repeat with remaining two-thirds of potatoes and egg mixture.
Sprinkle the cheese evenly on top.
Cover loosely with foil & pace in oven 45 mins.
Uncover & bake further 15 mins until the potatoes are tender & everything is bubbling & golden.
Remove from oven & serve.
