2 Tbs oil
500g pork pieces
2 cups sliced onions
2 cups diced mushrooms
1 tsp turmeric
1 tsp each ground cinnamon & cardamom
3 cloves garlic, peeled & sliced
2 Tbs flour
2 cups chicken stock
12 dried apricots, halved
rice to serve
Heat oil in a frying pan & brown the pork quickly on all sides. Set aside. Add the onions & muchrooms to pan & cook 5 mins stirring regularly.
Add garlic, turmeric, cinnamon & cardamom & flour & cook 1 min. Return pork to the pan with stock & apricots & bring to boil.
Transfer to casserole & cook at 180 degC for about 1 hour or until pork is tender.
Serve with rice.
