180g butter
180g sugar
2 eggs
1-1/2 cups overripe bananas, mashed
1/4 cup milk
1 cup flour
1 cup wholemeal flour
2 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla essence
2 tsp baking soda
Cream butter & sugar (at least 15 mins). Continue beating while adding eggs, one by one.
Add mashed banana, flours, baking powder, cinnamon & vanilla essence.
Dissolve baking soda in milk pour over dry ingredients.
Beat approx 25-30 sec.
Pour mixture into lined ring tin.
Bake 190 degC 35-40 mins.
Leave to cool at least 20 minsbefore removing cake from tin.
When cold cut cake in half, fill with fresh cream & sliced banana.
Sprinkle icing sugar on top.
