2 eggs
1 cup caster sugar
1/4 cup cooking oil
1/2 tsp canilla essence
1 cup flour
1 tsp baking soda
1/2 tsp mixed spice
1/2 tsp salt
1 cup sultanas
1-1/2 cups grated carrot
1/2 cup chopped walnuts
Combine eggs, sugar, vanilla essence, sugar, oil & sifted dry ingredients in basin.
Beat on low speed or with wooden spoon until mixed & smooth.
Stir in sultanas, carrots & walnuts & mix well.
Pour into well greased 20cm ring tin & bake mod oven 45-50 mins.
When cold spread with frosting.
Frosting:
Beat together 30g butter, 2 oz cream cheese, 1 tsp grated lemon rind & 1-1/2 cups icing sugar.
