1/3 cup coconut
1/4 cup caster sugar
1 cup srlf raising flour
Grease 20 x 30cm lamington pan.
Place coconut in small heavy based pan, stir constantly over med heat until lightly browned, cool.
Beat butter & sugar until light & fluffy, stir in coconut & flour.
Spread in pan, bake moderate oven 15 mins, cool.
Spread with topping, stand 1 hour or until topping is firm. Cut into squares.
Topping:
1/2 cup coconut
1 cup icing sugar, sifted
30g butter, melted
1/4 cup condensed milk
Combine all ingredients, mix well.
