125g butter
1 cup sugar
2 eggs
1/2 vanilla essence
1 cup mashed banana
2 cups flour
1/4 tsp baking soda
2 tsp baking powder
1/4 cup water
Cream butter & sugar until light & fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla & banana. Sift flour, baking soda & baking powder & fold in. Sitr in water, mixing well. Pour into greased & paper lined 18cm square cake tin. Scatter topping over. Bake 180 degC 40-50 mins. Leave to cool before turning out.
Topping:
50g butter
1/4 cup flour
2 Tbs sugar
1 tsp mixed spice
2 Tbs walnuts
Rub butter into flour. Add sugar & mixed spice. Finely chop walnuts & mix in.
