125g butter
1 Tbs golden syrup
1 egg
1 tsp instant coffee powder
1/4 tsp vanilla essence
1 tsp baking soda
1 cup milk
1-1/2 cups flour
1/2 tsp salt
1 tsp baking powder
Melt butter & syrup in pan over low heat. Allow to cool a little, then add beaten egg, coffee powder & vanilla essence.
Dissolve baking soda in milk. Sift flour, salt & baking powder. Add sifted ingredients alternately with milk to butter & egg mixture.
Pour into well greased 24 x 34cm slab tin. Bake 160 degC 20 mins. Ice while warm.
Icing:
3 Tbs butter
6 Tbs brown sugar
1-1/2 Tbs milk
1-1/2 cups icing sugar
Melt butter & brown sugar over low heat until sugar has dissolved. Sitr in milk. Remove from heat & beat in icing sugar.
