In a processor place 1/4 cup sour cream, 1/4 cup sherry.
While running add 200g cheddar cheese cut into cubes (or the same quantity of cream cheese for a smoother result).
Add herbs (fresh), eg 3-4 sprigs parsley, basil, sage or others to taste as well as 1 clove garlic & process well.
Season with salt & pepper.
Walnuts, paprika, etc can also be added if desired.
Leave for 15 mins in the processor before processing again to ensure a smooth, creamy consistency.
