150g sundried tomatoes in oil
2 cloves garlic, peeled
few sprigs of fresh parsley
1 small tomato (or 1/2 medium), roasted
few shakes Tabasco sauce
1/4 cup grated fresh parmesan cheese
freshly ground black pepper
salt
Drain tomatoes well of their oil but keep the oil.
In a food processor or small blender put the sundried tomatoes, garlic, parsley, roasted tomato & Tabasco sauce & process, adding the reserved oil until a smooth paste results. Add an extra 1-2 Tbs olive oil if required.
Pulse in the parmesan cheese & season if wished with pepper & a little salt.
Keep refrigerated in an airtight container.
