1/2 telegraph cucumber, seeds removed
2 tsp salt
3 cloves garlic, finely chopped
1-1/2 cups Greek-style yoghurt
1 Tbs extra virgin olive oil
2 Tbs chopped mint
1 Tbs lemon juice
white pepper to taste
Grate cucumber coarsly, place in sieve with salt & leave to drain for 15 mins. Using hands squeeze out moisture. In bowl combine cucumber with remaining ingredients. Refrigerate at least 2 hours. Serve chilled.
Makes 2 cups.
