1 cup cashews (unsalted, roasted & cooled)
250g camembert or brie
1/4 cup finely chopped or minced dried apricots
1/4 cup cfream cheese
1 Tbs chopped chives
Chop cashews roughly & set aside 3 Tbs for top.
Cut thin top off camembert & discard rind.
Using teaspoon scoop out soft cheese & place in small bowl. Mix cashew nuts, apricots & cream cheese.
Stir well until soft & creamy. Spoon into empty shell.
Sprinkle over reserved chopped nuts. Serve at room temperature with crackers.
Variation:
Replace apricots with dried peaches, mango or pineapple.
