2 Tbs pine nuts
30g butter
1 Tbs curry powder
1 clove garlic, crushed
125g blanced almonds
125g pecans or walnuts
1/4 cup sultanas
Toast pinenuts on oven tray in moderate oven 5 mins, cool. Melt butter in small pan, add curry powder & garlic, cook over low heat 1 minute, remove from heat. Add almonds & pecans or walnuts, stir until coated in curry mixture, place in single layer on oven tray, bake moderate oven 15 mins, stirring occasionally, cool. Combine with sultanas & store in airtight container.
