4 oranges
2 cups water
1 tsp salt
1-1/4 cups extra water
500g sugar
125g caster sugar
Remove rinds. Cut into 1/2" strips, place in bowl Dissolve salt in 2 cups water, pour over rinds, stand 48 hours, drain. Put in pot, cover in fresh water & boilo until tender (20 mins) drain. Place rinds in bowl. Place sugar & extra water in pan, dissolve sugar, bring to boil, simmer 5 mins. Pour syrup over rinds, stand 24 hours. Place rinds & syrup in pan, boil until rinds are transparent (15 mins). Strain off syrup. Sprinkle over caster sugar. Spread rinds on oven tray, dry slow oven & leave in oven to cool. Can be chocolate dipped.
