Ginger Plant:
1 tsp compressed yeast
1 cup lukewarm water
9 tsp sugar
9 tsp ground ginger
Mix yeast with 1 tsp sugar in large jar. Stir in lukewarm water & 1 tsp ginger. Cover with piece of muslin & leave 8 days. Each day add 1 tsp ginger & 1 tsp sugar.
Ginger Beer:
4 cups (1kg) sugar
7 litres water
1/2 cup lemon juice (strained)
Place sugar & 1 litre of the water in a large pan & stir over gentle heat until sugar dissolves. REmove from heat & stir in remaining water & lemon juice. Strain liquid contents from jar with ginger beer plant through double muslin (save solids to start next plant). Add this liquid to the water, sugar & lemon mixture. Stir well & pour into 6 bottles. Seal with patent seals & leave 5-6 days until fermentation ceases. Chill before drinking. The remaining plant can be divided in two & placed in two jars. Add 1 tsp each ginger, sugar & 1 cup lukewarm water to each jar, leave 8 days adding more ginger & sugar each day as before.
