2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1-1/2 cups sugar
1/2 cup currants
1/2 cup coarsley shredded coconut
1/2 cup chopped walnuts
1 cup vegetable oil
1/2 tsp vanilla essence
1 tsp lemon huice
3 large eggs, beaten
2 cups grated raw carrot
Mix dry ingredients, currants, coconut & walnuts. Mix oil, vanilla essence, lemon huice & eggs & add to dry ingredients with carrots. Turn into two greased loaf tins. Leave 20 mins before baking for 1 hour (180 degC).
