185g butter
1 cup brown sugar
1/4 cup treacle or golden syrup
1 egg
2-1/2 cups flour
3 tsp ground ginger
1 tsp cinnamon
1/2 sp baking soda
sugar for rolling
Beat butter, brown sugar, treacle & egg until light & creamy. Sift flour, spices & soda.
Gradually stir into creamed mixture until combined. Wrap & chill dough until firm. Shape tablespoonsful into balls. Roll in sugar to coat. Place 5cm apart on greased trays. Bake 180 degC 10-12 mins. Cool on wire racks.
