250g butter
1/2 cup caster sugar
2 egg yolks
1 tsp vanilla essence
2-1/4 cups flour
red jam
Beat butter, sugar, egg yolks & vanilla until light & creamy. Gradually stir in flour, wrap & chill dough until firm to roll. Roll out to 1/4" thick. Cut into rounds, place on ungreased trays. Press centre of each biscuit to make a hollow. Fill with dab of jam. Bake 150 degC 18-20 mins. Cool on wire rack.
