4 chicken pieces (800g) skin removed
2 tsp cumin
2 tsp coriander
1 tsp paprika
1/3 cup flour
1 kg tomatoes, roughly chopped
1 large onion, peeled & sliced
2 cloves garlic, peeled & finely chopped
Place the chicken pieces, cumin, coriander, paprika & flour in a plastic bag. Shake to coat the chicken pieces. Place in a baking dish & arrange the tomatoes, onion & garlic on top. Cover & bake at 180 degC for 30mins. Stir well. Remove cover & continue cooking for another 30 mins or until the chicken is tender & golden brown.
