2kg ripe tomatoes
4 cloves garlic
2 tsp peppercorns
2 chillis
fresh rosemary sprigs (optional)
3 cups olive oil
Remove a thin slice off the top & bottom of each tomato. Slice the remainder into 1cm thick slives. Spread out in a single layer on dehydrator trays. When dry to touch, light but still pliable & leathery pack into sterilised jars. Add garlic, peppercorns, chillis & rosemary. Cover with olive oil.
Makes approx 2 x 300ml jars.
