75g dried apricots, soaked overnight in warm water
3/4 cup craisins, soaked 1 hour in hot water
50g butter
2 onions, finely chopped
4 stalks celery, scrubbed & coarsely chopped
150g walnuts
2 cups fresh breadcrumbs
1 egg, lightly beaten
1 Tbs chopped parsley
2 Tbs chopped thyme
grated zest 1 lemon
salt & freshly ground black pepper
butter or oil for frying
Drain apricots & chop roughly. Drain craisins.
Melt butter in medium sized pan then add onions & a tablespoon of water. Cover with a lid & cook gently until soft. Add celery, apricots, craisins & walnuts & cook 5 mins, stirring often. Turn into a bowl & cool.
Roll i nto small balls, arranging on a lined tray. Chill for an hour then fry in sizzling butter or cook in a shallow oven tray in a small amount of hot oil.
Good accompaniment for turkey.
