Recipe Manager

1 small onion, finely chopped
1 stick celery, scrubbed & chopped
100g bacon, chopped
olive oil
1 cup fresh breadcrumbs
300g can whole kernel corn, drained
2 cups shredded cooked turkey meat
salt & freshly ground pepper
2 eggs, lightly beaten
1/2 cup plain flour
butter
Put onion, celery & bacon in a pan with 1 Tbs of oil & cook gently for 10 minutes. Transfer to a bowl & allow to cool.
Add breadcrumbs, sweetcorn & turkey to onion mixture, seasoning with 1/2 tsp salt & plenty of black pepper. Beat in eggs & shape into 16 patties.
Dust patties with flour. Heat large frying pan over medium heat, drop in a couple of tablespoons of butter. Fry patties until golden & crisp. Serve with cranberry sauce & a tossed green salad.
