6 lb tomatoes
6 large onions
6 large apples
1 pint vinegar
1 lb brown sugar
2 oz salt
1 oz peppercorns
1/2 tsp cayenne
1oz broken whole ginger or 1/2 oz ground ginger
Boil all together 2-3 hours, strain.
Bring to boil again before bottling.
Cork when cold.
9lb tomatoes = 8 x 750g bottles
